Today, on the Christmas Eve, we offer you to take look at kutya through the lens of a nutritionist
– a doctor who knows everything about the human body, the peculiarities of the course of diseases of internal organs, and also knows in detail about the chemical and biological composition of each product, its effect on the body, including benefits and the harm of everything we consume.
So, kutya is not only a sacred ritual dish of the Slavic peoples, but also extremely tasty and good for the body.
Our ancestors prepared kutya as a ritual dish almost six thousand years ago. The most useful things that nature sent for food were added to it.
The basis of kutya is grain, i.e. wheat. The grain in the primitive culture symbolizes the infinity of life, because when it is planted into the ground, it sprouts a new crop. Proteins are the most valuable part of grain. Wheat proteins are complete proteins, as they contain all essential amino acids, including the most important ones: tryptophan, methionine and lysine. There is also a lot of potassium, phosphorus, magnesium and calcium in the grain.
The next component of kutya is poppy. It is customary to put a lot of poppy seeds into the dish as a symbol of prosperity. If we are talking about nutritional value, each poppy seed contains 15% protein, 75% carbohydrates, 2% fat. Poppy seeds are also rich in calcium.
There is also no kutya without honey, which contains glucose, fructose, sucrose, potassium, calcium, magnesium, and sodium.
The fourth mandatory component of kutya are walnuts. They also contain a lot of protein, fiber, useful carbohydrates, an incredibly large amount of trace elements, vitamins A, B, C, E and PP, and fatty acids necessary for the human body.
Looking at what our ancestors added to kutya from ancient times, one cannot help being amazed by their wisdom and knowledge.
Sometimes dried fruits were added to kutya – either dried apples, pears or plums.
Dried fruits were also used to make another mandatory Christmas Eve dish – uzvar. It is often prescribed during sanatorium-resort treatment. Dried fruits contain a large amount of fiber, which is useful for the gastrointestinal tract, as well as minerals and vitamins of group B. Based on this, you could say that a glass of uzvar is a real elixir of health and longevity. If uzvar is made from dried apples, it contains a lot of iron, which is needed for blood formation. If it is made from pears, it’s meant to improve the health of the nervous system and the removal of toxins from the body.
